1. place the noodles in a pot of salted boiling water

2. stand by, they're almost done, and you don't want them soggy. play with the pretty black and gold band if you get bored

3. add a dash of hot and sweet thai chili sauce and the zest of a lime

4. come on, dump it on in there, glug, glug, glug

5. and don't be shy with that sesame oil

6. nor should you be shy with the juice of a lime or two

7. meanwhile soak the rice papers in cold salted water

8. until they turn opaque, be very gentle though, they tear easily when you try to fold the noodles into them

9. add the coreander leaves and save the stems for something else

10. a good handfull of fresh and crispy mung bean sprouts and some finely sliced spring onions. fold this burrito-style into the rice papers.
